Strawberry and Lemon Gummy Hearts
These fun gummies are a lighter twist on the strawberries and cream version! Slightly sweet, slightly tart and naturally bright, this is a great alternative to lollies for the young ones, or a delightful treat if you’re craving something sweet.
Ingredients
- Juice and zest of 1 lemon
- 1 cup strawberries or raspberries
- ¼ cup high-quality gelatin
Method:
- Place lemon juice and berries in a blender and blend on high until smooth.
- Pour the mixture into a bowl and sprinkle the gelatin evenly over the surface. Let it sit for 5-10 minutes to bloom.
- Once bloomed, transfer the mixture to a saucepan and gently heat over low heat, whisking continuously until the gelatin fully dissolves (avoid boiling).
- Pour into silicone molds.
- Refrigerate for at least 1 hour until firm.
- Remove gummies from the molds and store in the fridge.
