Strawberry & Coconut Layered Gummies
Since when would anybody have thought that a ‘gummie’ could be healthy?! This version is filled with good quality, gut-healing gelatin, high-antioxidant berry and flavored with a silky-smooth coconut cream layer. This recipe is a delicious fusion of classic flavors.
Strawberry Layer
Ingredients
- ¾ cup lemon juice
- 1 cup frozen or fresh strawberries
- 2 tbsps high-quality gelatin
Coconut Layer
Ingredients
- 1 cup coconut milk
- ½ tsp vanilla extract
- 1 tbsp pure maple syrup
- 2 tbsps high-quality gelatin
Method
- Place lemon juice and strawberries in a blender and blend on high until completely mixed. Pour into a saucepan.
- Add gelatin and whisk together.
- Pour into a lined slice tin or small baking dish.
- Set in the refrigerator for at least 1 hour to firm up.
- In a small saucepan add coconut milk, vanilla extract, maple syrup and the rest of the gelatin, and whisk together.
- Cut into bite-size squares.
