Raw Vitamin C & Ginger Slice (Recipe)
A zesty slice filled with energy-boosting ingredients, including our favorite Vitamin C powder!
BASE
- 1/2 cup almonds
- 1/2 cup medjool dates
- 2 tbsp coconut oil
GINGER LAYER
- 2 cups soaked cashews
- 1/4 cup coconut cream
- 3 tbsp Vitamin C
- 2 tsp ground ginger
- 2 tbsp pure maple syrup
LEMON LAYER
- 2 tbsp coconut oil
- 3 tbsp coconut cream
- Juice of 1 lemon
What to do
- Create the base first by combining almonds, medjool dates & coconut oil in the food processor and process into the sticky crumble. Press the base mixture into a small lined slice tin. Place in the freezer to set.
- Next the Ginger Layer by combining soaked cashews, coconut cream, vitamin C powder, ground ginger, and rice malt syrup into a clean food processor and process until smooth and creamy. Pour this layer over the base, spread evenly, and return to the freezer for an hour or so.
- Combine the lemon layer in a bowl and spread evenly as the final layer on your slice. Return to the freezer and allow to set for 2-3 hours.
