It’s been a while since many of us have had a crowd around the table for dinner, so it’s no surprise if you’re stuck for inspiration on those bigger meals. Healthy dinners to feed 4-6 mouths, that actually taste good too, aren’t always easy to come by. So when you find them, they’re worth holding onto. Consider this recipe collection your new bible for the dinner table (but meal prep for the week is encouraged too).
1. Thai Quinoa Salad with Spicy Peanut Dressing
This salad tastes like takeout, only better. The dressing is possibly the best part, and it’s made with all those easy ingredients you have hiding in the cupboard. It’s a recipe you can’t go past.
2. Lentil Tacos with Creamy Lime Dressing
Nothing feeds a crowd quite like tacos. But instead of relying on lots of different moving parts, these tacos are easily thrown together using lentils as a base. They’re easy, they’re delicious, and they’re good for you too.
3. Greened Up Shakshuka
If there was ever a food to argue its case as breakfast-for-dinner, it would be shakshuka. This simple twist on a traditional Tunisian dish brings a healthy serving of greens to the table (but disguises them for the fussy eaters). It’s also a great way to use up any wilted veg.
4. Lentil Shepherd’s Pie
Shepherd’s pie is a family favorite, so this healthy version tastes just like holidays at home. It’s easy enough to throw together for a dinner round the table, but also freezes well if you want to make ahead.
5. Mushroom & Lentil Bolognese With Zucchini Spaghetti
Pasta is one way to keep a whole table happy, but we’ve taken the carb-heavy, gluten-filled pasta and replaced it with delicious zoodles. There’s always plenty of bolognese to go around, but you might even be tempted to double the mixture so there’s leftovers for the week.
