Greek Farro Salad Recipe
It's the start of a new year, and for a lot of people, that means implementing a healthier lifestyle and trying new things. This Greek Farro Salad is delicious, has many health benefits, and if you haven't cooked with Farro before it is a great recipe to start with.
This easy to make recipe consists of fresh ingredients and includes a simple greek dressing.
Ingredients
Salad
- 1 cup (159 g) dried farro, rinsed
- 1 cup (175 g) red bell pepper, diced
- 1 1/2 cups (216 g) cucumber chopped
- 4 (22 g) green onions, sliced
- 2 tsp (10 ml) fresh chopped parsley or 3/4 tsp (3.7 ml)dried parsley
- 1/2 cup ( 150 g) feta cheese, crumbled
- 1/2 tsp (2.5 ml) salt
Dressing
- 1/4 cup (59 ml) olive oil
- 3 tbsp (45 ml) lemon juice
- 2 tsp (10 ml) honey
- 1/2 tsp (2.5 ml) salt
- pinch (0.31 ml) of red pepper flakes
- 1/4 tsp (1.2 ml) garlic powder
- 1 tsp (5 ml) dried oregano
- Freshly cracked black pepper to taste
Method
- Whisk all the dressing ingredients into a small bowl or measuring cup. Set aside.
- Boil 4 cups of water in a medium saucepan. Stir in farro. Return to a boil. Reduce heat to medium-high and cook, uncovered for 10 minutes. Drain. Stir in 1/4 tsp salt. Set aside.
- In a large serving bowl combine cucumber, pepper, green onions, and parsley.
- Add the warm farro and feta cheese crumbles to bowl and drizzle dressing over top. Toss to combine. Season with extra salt and pepper to taste. Dish up and enjoy!
Note: You can substitute the red pepper for tomatoes. Or just add in tomatoes and/or olives for some extra veggies and a more traditional greek salad
