Dark Chocolate Almond Butter Fudge Recipe
Three ingredients, one incredible sweet-tooth satisfying snack. This decadent almond butter fudge recipe from Rawsome Superfoods is impossibly easy to make and won’t leave you with a crazy sugar hangover. Whole-food, nutrient-dense desserts like this one are part of what learning to eat healthfully is all about.
This fudge is inspired by my friend, Alix, with whom I had the privilege of staying for a few nights in Berlin. Her morning routine always involved roasted almond butter paired with gooey Medjool dates and a few pieces of extra dark chocolate, as well as a creamy bowl of overnight chia pudding. Every day I looked forward to our breakfast, which she generously shared with me. The date-chocolate-almond butter combo is one I cherish to this day, and since my stay, I’ve fallen in love with 99% dark chocolate.
Ingredients
- 3.5 oz (or 1 bar) very dark chocolate, melted
- ½ cup almond butter
- ½ cup pitted dates
Method
- In a high-speed blender or small food processor, blend the ingredients until smooth. The mixture will be very thick. If it is too thick for your machine, add almond milk, brown rice syrup, water or more almond butter as needed.
- Spread it evenly into a lined pan and leave in the freezer for 20 minutes or until hardened. Slice into squares and enjoy! Add extra almond butter on top if desired. These will keep for a month in the fridge.
