Let’s make coconut raspberry chia bars from our FM cookbook🍓 ⁠

Step 1: Coconut Base⁠
-Mix 1/2 cup coconut oil, 1/3 cup maple syrup, 1.5 cups almond meal, 2 cups shredded coconut, and 1 pastured egg.⁠
-Bake at 350°F (175°C) for 15 minutes.⁠
Step 2: Raspberry Chia Jam⁠
-Combine 2 cups mashed raspberries, 1/4 cup chia seeds, juice of 1 lemon, and 1 tablespoon maple syrup in a small saucepan on medium, remove from heat and let set.⁠
Step 3: Coconut Crumble⁠
Mix 2 pastured eggs with 2 cups of shredded coconut.⁠
Step 4: Assembly⁠
-Layer the coconut base, raspberry chia jam, and coconut crumble.⁠
-Bake for another 15 mins at 350°F (175°C) or until golden. Let it cool and enjoy! ⁠
